Honey Beer

I'm planning a honey beer for my next brew, I have adapted EB's Waggle Dance Clone

I think i'll put the honey in for the last few mins of the boil. How does this recipe look? Any particular type of honey I should use? And what yeast reccomendations do you have?

25L batch
Target OG 1044
EBU 35

3900gm Pale Malt (MO) 82.6%
70gm Crystal Malt 1.5%
750gm Honey 15.9%
40gm Fuggles [AA 4.50%] (90 min) 19.1 IBU
65gm Styrian Goldings [AA 2.00%] (90 min) 13.8 IBU
25gm Styrian Goldings [AA 2.00%] (10 min) 1.8 IBU

S-04could add some nice esters to the beer, as I don’t think there will be an aroma for the honey as it will ferment out completely

I have heard of people adding the honey after Kräusen to help retain some of the flavor

Boiling it even for a few minutes would certainly get rid of the aromatics, how about adding it at the end of the boil and letting it steep while you cool the wort? I agree with SO4, would probably leave you with some honey flavour.

Steeping it for a few mins would probably be fine. I actually found that I still had a big honey aroma with my Bumble Bee clone but then I did use double the amount of honey.

I'd go with the S04 too (and have done) - it's cheaper and doesn't make much difference to my tastebuds.
