Keeping Time opinions please
Keeping Time opinions please
Made a bitter for a guys charity bash, c. 4.5% abv.
This was originally scheduled for consumption in 17 days time, and I've just racked it into the final barrel.
Due to the floods, he's had to postpone his event, probably to the end of August/early September.
Can I have opinions as to whether this would still be in good condition after this length of time, or should I do another brew in a week or two? Bearing in mind we may not have water restored until then. Not a problem in the brewing sense, as I use spring water for brewing, but definitely in the cleaning up stages, as I've found out just transferring from 2ndry to final barrel.
Any opinions please?
Keith

I also would have said brew again and keep (can you ever have too much beermonk wrote:I voted brew again, but I would've gone with "all of the above". Your brew will be nicely conditioned at the end of Aug/beg of Sept, and you could brew again now and have a second one on tap. Just an idea.
Monk

I voted for keep.
If your circumstances had been different I think there would of been a loud shout for brew again. I think at the moment you have other things to worry about and if there is no clean running water in the house. It would be a ball ache
On a side note, you never know your brew may mature into a total beauty over that time.......... IF temptation dosnt get in the way

Well, it looks about 5:1 to keep. Not too much of a problem, as I've just started drinking a different 5 gal brew, and I must have about another 5 gals in bottles.
I have a wet cloth around the barrel to try to keep it at a reasonable temperature should we ever get back to a decent summer, and the priming fermentation should proceed at a fairly slow pace with that around it.
If it all goes pear-shaped, I'll blame you lot
Thanks for the feedback
