Bottling 'White shield'

Post by Jimberbob » Tue Jul 31, 2007 6:47 pm

I have 5 Gallons of White shield, the recipe taken from BYORAAH. I would like to bottle it.(Not sorted out a gas supply for my recently purchased Cornies yet.)
My question is, when is the best time to bottle?
At the moment the beer has been in the secondary vessel (king keg) for 16 days, it is just starting to look clear, although not crystal clear.
Do I wait for it to drop crystal clear? Or shall I bottle it now and let it clear in the bottle? Should I prime the bottles? I was planning to mature in the bottle for at least 4 weeks.
I used Gervin ale yeast.
Any tips from the massed experience on this forum would be gratefully received.
Ta! :)

I find with secondrying, add your carbonation sugars 12hrs(or so) before bottling with a slight stir with a sterilsed spoon to bring the yeast into suspension. This has helped me out with beers that have been in secondry for more than a month, and the beer has been carbed up and ready to drink within 7 days

I would bottle straight away and would definately use some priming sugar. If it isn't quite star bright there will be enough yeast is suspension to get things going fairly quickly. I tend to leave mine at room temperature for a week before transferring to the garage for longer maturation period.

I was at the History of Brewing Museum at Burton on Trent a couple of weeks ago and had a pint of White Shield in the bar at the end. It was a rather nice day 8)

Smashing! :D
Looks like i'm sterilising some bottles tonight then, thanks for the info.
I have to say White shield is probably one of my favourites, but it seems very hard to come by these days. I hope this one turns out like the real thang, i'll keep you posted. :D
