Been two weeks now and the beer has only improved.
Will keep everyone posted on how this beer develops but it looks like I'm able to brew beer that I want to drink and not just beer that I can drink but don't really feel like drinking (if you get what I mean).
Will still be looking to try liquid yeasts too, but I'm glad I know how to get the most of the dry yeasts.
NB, I'm sold to using bottled water rather than water treatment.
In the end it was fermenting hot break that caused me a problem.

Might revisit the bottled water myself sometime in the future. See what difference it would make to now that I can taste the beer rather than that flavour that really did spoil things

Let me know when you've used the liquid yeast too, it's still on my to do list

Well done again for not giving up. I know how disheartening it can be when everything you try falls flat

So SO satisfying though to sup a really nice beer that you've brewed yourself, CHEERS
