What I meant DaaB is that I have measured the gravity before anything has evaporated.

Once the boil is over I will have a higher gravity which means my efficiency will be an accurate calculaion.

I was basing the efficiency on the volumes collected, not the final wort.

I know the efficiency won't change, it was just my preliminary calculations where more 'if this was the actual reading'.

Well, my efficiency was very dissapointing. Comes in at 51.13%

I think that I lost a lot more wort to the trub/hops than anticipated - nearly 3 litres. Because of this I had to top up to the desired amount with water.

Lesson learned from this -

Make sure I have enough wort left over that I can use to top up with!!!!

Boil left over wort seperately and add to fermenter....

Still, with an OG of 1.068, I should get about 6.4% ABV

Next brew I should get a better efficiency. I'll make sure of it!!!!!!!!!!!!!

Just taken a gravity reading as fermenting LOOKS to be complete. When I say looks, I mean that the krausen has fallen back. There is no airlock so I can't use that to judge. I may rack to secondary and throw an airlock on then...

Anyway, the gravity reading was 1.022 which gives me a ABV of 6%. Hopefully this will drop some more as the beer is a little sweet. Regardless, the tiny taste (it is only 8:30am) was amazing. Really looking forward to enjoying this finished brew....

Agree with the above except if you boil the spare wort on the kitchen hob or similar then add it to your main boiler in the last 10-15 mins of the boil rather than directly to the fermenter. You then chill the entire wort in one go, benefit from the cold break and also get all trub filtered via the hop bed.

When you add the spare wort to the main boiler then the rolling boil should continue as the additional wort is virtually at boiling point anyway - just be careful carrying the stuff , especially with little 'un around :?

Just kegged my stout. As well as what is in the keg, I have 4 bottles for my 'storage' box. Basically I have started to store a small portion of my beers away. This way in time I will be able to come back and see what they are like after a really good mature. Each bottle cap is coded and I have a tracker of what each code means.

As well as the bottle I have taken a sample for my hydro reading. It comes in at 6.5% which isn't as strong as I wanted but not as weak as it could have been - which is good!

The sample tastes amazing - I just know that when it has 'cleared' (okay it is a stout and won't clear - but you know what I mean) it should taste thousands of times better.

It has great mouthfeel and should improve with a bit of carbonation...

The stout has been in the keg for all of 3 days. This didn't stop me drawing off a small sample (whiskey glass).

I gave the wife the glass so she could have a taste. Now normally the comments are either - Don't like it it has a funny aftertaste, yeah it's okay or No don't like it.

After the comments I get my drink back and get to enjoy it.

Now back in the day the wife used to drink a lot of real beer so I do value her opinion. As long as I like the beer, I don't mind if she has negative comments since she wont be drinking it anyway.

So, after having a taste she asks me what it is called (Strong Stout).

Wow, it tastes like a real stout.

Now I think that this is the biggest compliment I have had from her about any of my beers. So, I take the glass ready to drink the rest. I have a sip and put the glass down - I want to savour this one.

So, that isn't for me then?

What? She actually wants more? She wants to finish the glass I have given her? I honestly don't think I can take a bigger compliment on my beer at all. If the wife likes it enough to want to finish the glass then I know I have scored a great beer.

At least I now have something to offer my Dad on Wednesday when he comes to visit :D
