Hi guys,

For my first AG brew in a couple of days time I have decided to use a recipe posted by NorthernBrewer (viewtopic.php?f=5&t=18930) called Folding's Guggle. The main reason being is that is seems very simple and my local homebrew shop stocks the ingredients:

Folding's Guggle

4KG Pale malt
300g Crystal Malt (7%)
20 IBUs Fuggles (55g if 4.2%) 90 mins
15 IBUs Goldings (45g if 4.3%) 90 mins
15g Fuggles 15 mins
10g Goldings 15 mins
S04 Yeast
Primary 10-14 days then keg.
Mature for 4 weeks before drinking (or at least try to).

Today I finished building the last part of my equipment and I believe I am ready at last :) Can somebody please tell me if my planned approach (yes, I really want my first attempt to be bang on!) is correct as I am unsure of a few things? From the limited knowledge I currently have i plan to do the following on brew day:

step 1. Mash the 4.3Kg of grain at 66C for 90 mins using 12 litres of water.
step 2. About 30 mins before the 90min mash is complete I will use my boiler (it's a 10 gallon one) to bring 5 gallons of water up to 180 degrees F to use as fly sparging
step 3. When the mash is complete I will run off via the tap a few pints of wort from my mash tun and return them to the top of the grain
step 4. Begin sparging the grain in the mash by opening boiler tap and opening mash tun tap to run in to 5.5 gallon bucket ( 3 tier system). I have a watering can rose on a hose attached to the boiler for sparjing assuming the spray will be fine enough
step 5. when i have collected about 6 gallons of wort I will empty the boiler of any remaining sparg water and pour my 6 gallons of wort in to it and bring it to the boil
step 6. When boiling is reached add 55g of fuggles and 45g of goldings. 15 mins before the end of the 90 mins boil add 15g of Fuggles and 10 of goldings.
step 7. After 90 mins when the boiling process is over I should have about 5 gallons of wort due to evaporation. Now, I think i need to wait for 5-10 mins for the hops to settle to the bottom of the boiler. Is this correct?
step 8. open tap of boiler and drain wort in to fermenting bucket and insert my immersion chiller in to the fermenting bucket and turn on tap to try to cool the wort quickly.
step 9. When wort is between 20C and 24C, take hydrometer reading and then add my already activated i(n a bottle) beer yeast. Move fermenting beer somewhere warm and sit back and crack open a cold one to celebrate a successful first brew assuming fermentation will not screw up :D

My 3 main queries are:

1. After the boil do you always have to wait for 10 mins for the hops to settle and then immediately cool the wort either in the boiler or fermenting bucket?
2. no irish moss is present in this recipe. Should I add it? anything else missing?
3. On step 8 i think I read somewhere that it is good to pour a few kettle fulls of boiling water on the hops at the bottom of the boiler to extract some more goodies and top up the wort with this. Is this a common practice for all brews?

1) Personally i chill in the boiler and then runoff into the fermenter, the hops settle anyway while its chilling, so no need to wait.

2) Yes if you have it add it with about 15-20 mins to go, it'll help with the clarity.

3) I don't bother but some more parsimonious brewers have been known to do that.

A couple of other pointers, i would be inclinced to try and get a bit more wort in the boiler than 6 gallons (stop sparging when a hydro reading reaches 1010).

Don't bother waiting 4 weeks to drink it, you deserve to taste the fruit of your labours sooner than that (sometimes i can be drinking beers just days after going into the barrel). At least that way you will see how it matures over time.

And last but not least, get planning your next brewday because once you taste your 1st AG you can be sure it won't hang about long.

Seems like I know enough to start my first brew with confidence :) Yeah I never would make it 4 weeks before sampling!

Looks great! Definatly chill in the boiler By the way. That way all you break material can be collected by your hop strainer. What is your local Home brew shop as I'm in Southampton an have struggled to find a good one?

There are 2 HBS shops within reach: 1 in Hythe and another in Fareham (www.4u2brew.co.uk). The one in Hythe is a health food shop that stocks some homebrew but is no good for obtaining grain and hops etc but it fine for chemicals, some equipment, kits etc. the fareham one is much better and has a lot of kit (including the same 10 gallon buckets we both got from H&G to modify in to boilers....)

If I get in to this beer brewing in a big way I will look at ordering my grain in bulk from suppliers as it seems expensive to buy it in little bags from HBS. Warminster maltings looks good for grain and is 1 hours drive but I don't know if they sell direct to the public.

They do sell direct - but their prices look very steep. I'm going to call them and see if I can negotiate a better price for a bulk buy.

Wow, it's seems like there are a few of you in my neck of the woods. And I thought everyone on this Forum was from the north east! Cheers for the tip offs on the home brew stores, I have been to a convenience store called Wellsetead & Daily http://www.yell.com/listings/DoFindList ... ng-Supplies in Fair Oak before. They have a whole home brew section in the back which is great for emergency ssupplies but its mainly kits, but they do have pressure barrels and sometimes some vacum packed Goldings and some pale malt.

And I'm always up for a swift one in the Nelson Chris. Don't worry about me using easybrew, my first ever home brew order (a kit) was from them and It took about 3 weeks and endless emails / phone calls to get it!! Never Again

actually Chris, the HBS shop in Hythe is a new one called Romany & Rye. The old one near the Nelson closed and I think the owner opened up a new store around the corner selling similar stuff.

Yep, i have been to Wellstead & daily as well but not for some time. The one in Fareham is the only pure HBS I know apart from dodgy Easybrew in Ringwood (went there about a year ago).

jdt199, How is your brew coming along? I guess primary fermentation could be close to over now?

Yes its been in secondary now for 5 days but is still cloudy. Link here viewtopic.php?f=24&t=19269&start=15&st=0&sk=t&sd=a. I added som Isinglass finings today from H&G so Ill see how it goes. If you havn't done your brew yet don't foget some irish moss or equivalent finings to the end of the boil. Ill add more pics when kegging I think.

I wouldn't worry about it being cloudy. I've had my AG in the bottles for two and a half weeks and it's only just starting to clear from the top down. As someone told me, just have patience. I'm sure it will clear with the finings but really i don't think you need to add the finings if you can afford to wait. It should still taste great whether its a little cloudy or not.
