Brew Day 02/01/2007 - Another TTL

Get advice on making beer from raw ingredients (malt, hops, water and yeast)

There is a misconception which came through a lot of older books on winemaking and brewing that the ferment must be kept WARM...

I've got the fermenter in the spare room and the immersion heater set to 20°c, so obviously any wort temp above that and it switches off. Now my house isn't the warmest of places, so I doubt room temp gets above 20°. Maybe I should be setting the therm for 18°c in future, or based on room temp readings at the coldest part of the day/night, not include it at all... :?:

Perfect! At my place I struggle against 3 women who like to have a warm house so it's a constant battle to keep fermentation temperature reasonable when the ambient air temperature is usually 20c - 22c if they get their way.

Tell me about it - 'er indoors would keep my place a permanent sauna if only the heating was up to it :lol:

Took a gravity reading last night after 5 days in the primary and its down to 1006 :shock: Only made 1012 before...
Think I'll give it another couple of days (no heater) for a diacetyl rest :?: then chuck it in a cornie with some finings. Or should I get it out pronto so it doesn't ferment down even further :?:

A wee taster and it wasn't a lot like TTL! :lol: Pretty nice though - could taste the floral styrians coming through so hopefully will end up a nice drinker.

After 3 weeks in the keg its tasting good, and more like TTL from what I remember - I'll have to get a bottle and do a side-by-side tasting tomorrow but to be honest I think I prefer the taste of my clone :)
I'll just have to make sure I don't drink it too quickly - its slipping down waaaaaaaay too easily and I reckon I'll get a third pint right now...

It's my clearest beer to date too 8) can't wait to get the builders out of the house so I can get brewing again.... think I'll have to get another fermenter to cope :lol:

I had two litres of my TTL last night and I have another 5 litres in a plastic container with me (am away from home and took beer supplies :lol: )
