Finally I have got this brew bottled. So far it seems there is no difference whether I used flaked wheat or Shredded Wheat. Taste and colour is as expected. If anything remarkable changes after conditioning I will post it here - otherwise it is safe to consider shredded wheat a suitable alternative to flaked wheat.

A protein rest halps with efficiency, reduces teh chance of a stuck mash and will reduce soem of the complex proteins that give crazy foam heads on wheat beers. A little head is good but an icecream topping can be annoying.

Ha only seen this now, I've a brew ready for dry hopping tomorrow I call it an American Wit.
50-50 Irish Lager malt and local unmalted wheat (crushed in a mill) with American hops and US-05
Efficiencey was a bit low but not bad for 50% wheat.
Wheat is working out at 26c a Kg and is localy grown, so here's hopeing

The brew turned out fine. Good long lasting head and no change in flavour. I have since repeated the beer using proper ingredients and side by side I can't tell the difference.

I'll stick to the traditional recipe, only so I don't have to 'fess up that people are drinking breakfast cereal. However should I get caught short on wheat again I won't hesitate to use either Shredded Wheat or rolled spelt, and just keep it a secret!
