I wonder, has anyone ever tried to reproduce this method at home? I have a vague idea about how they work and it would be interesting to know if they really do anything conventional fermenting doesn't.

I would say they do nothing. I've been to Marston's about 12 years ago. I've got many pictures of their operation. The Burton Union is used primarily as yeast cultivation system. If you're interested in the wood, trying adding oak chips to your secondary.

Like Yorkshire squares they would only be needed if your yeast demand it!
