Hello, not sure if I should not have posted this under Yeast really but anyway. I started my 2nd ever AG last friday (March 28th), 25ltr consisting of...

Pale Malt 4kg
Crystal 250g
Amber 250g.....Mashed for an hour at 67c.

Goldings (EBU 35) at start and as late...... 90mins boil.

Hopback Summer lightning Yeast cultivated from 4 bottles.

I did cool the wort but not sufficently to pitch the yeast as it was friday night and i had to go to the pub. I measured the OG at just over 1042.
I pitched the Yeast on Saturday Morning.
All i have for heating is an HB immersion heater.

The Fermentation started off ok, if not a bit one sided over the heater. but now 3 days later has 'reduced' back down. Im wondering if this is normal? I was planning on leaving it for 10 days, I have not taken any further SG readings as I do not have a tap on the FV and do not want to unnecessarily disturb it.

If someone can tell me how to post up some photos I will.

You could always sanitise your hydrometer and leave it in the beer :wink:

I've tried beer bottle yeasts in the past, never again.... If the yeast is not what you think it is, i.e, just a bottling strain, you've wasted 6hrs brewtime and about a tenner in grain!!
I get good results with a Safale Yeast S-04.
Ferments quick, clears great...

Thats good news. I just wanted to make sure as it had changed so much. Im a bit jittery as my 1st AG didnt turn out so good.

Hello everyone, here's an update on my brew.

Yesterday, sat 5th apr (7th day), I skimmed off the yeast head to take an SG reading. The temp was 22C, taking the temp into account, the SG was 1011.

I have just taken another reading today (8th day). The temp was 21C, taking the temp into account, the SG was 1011. A few bubbles are still rising, you have to wait to see them. This is how it looks today, the yeast around the heater was left after i skimmed it, the other bubbles have formed since then.

I had a taste on both days :) , it tastes great, its quite hoppy and its bitter not sweet.

Im going to bottle it, mainly using the old Quart glass cider bottles.

Do you think now is the right time to bottle or should i wait a couple more days?
I can prime with either white sugar or pale spray malt. What do you reckon is best and what quantity would you recommend?

If I were bottling it I would wait ten days (or as close as possible and with regular hydro checks) if I were kegging it I would wait 7 or eight days. As for priming sugars, anything will do as it doesn't seem to affect the taste (much :wink: ). I've found stronger tasing sugars i.e. brown sugar or honey make more impact on the flavour than t+l, spray malt, dextrose etc.

BTW, that photo of the strange coloured krausen is cool, never seen one that colour before :wink:

Yeah, I'm gonna pop over to the H+G to get supplies and get a Bitter and Twisted clone done PDQ.

I'm seriously thinking of doing two.... :?

Hello. Checked the SG again tonight (day 9), it is still 1011. I can still see bubbles rising. Still tastes good. I gave it a gentle stir, if its the same again tomorrow evening i will bottle it & bottle it. After reading the other posts about Priming I have decided to prime the FV with 60g of T&L. Does this all sound ok? Should i leave it longer?

In my layman's opinion, if bubbles are still rising I'd be in no rush to put it into glass bottles.

Thanks fivetide. Thats why i gave it a stir in case it needed it? I dont really know how to calculate the expected FG, but am guessing it's about 20% which for this brew is about 1008 - 1009ish... So its still abit high. Is this right or should i just wait?
