Oatmeal Stout

I want to make an oatmeal stout and using Beersmith the recipe I hav created contains flaked oats and recommends a protien rest as oats can make the beer hazy.I am not too worried about the haze because the beer will be almost black due to the amount of black malt I am using (3.4%)but was interested what a protien rest involves.Also I have had a quick look on Hop and Grape and they dont have any flaked oats,do we call them something else now ? Lastly what sort of amount should I be putting in my recipe,I quite like sweet beer and again Beersmith states the max in batch to be 30% but I am thinking that this is way too high ??

Flaked Oats are in the Breakfast section of the supermarket. I'd use around 10% in an oatmeal stout and I wouldn't bother with a protein rest.

Flaked Oats actually taste of very little when used in beer although they do affect the mouthfeel of the beer. I think you should think about toasting the oats in the oven for a bit until they are golden and smell good and then use them.
