Racking question...

Post by Whorst » Tue Jul 29, 2008 4:02 pm

The beer I just brewed in winding down. I'll probably rack it tomorrow into the corny for dispense on Saturday. I usually prime in the corny to serve on the engine. I'm wondering if I should just rack it without priming sugar. There should still be some C02 in solution that might be adequate??

I just checked the gravity. It's about 1.010 now. 9 brix starting, down to 5. I find nothing unusual about the flavour of 04. I would not be able to tell that the yeast used was dry. It definitely tastes hoppy in an English way. I love it. Mouth feel is nice and malty for a 1.036 beer. Flavour of wood, and hop, with very nice aromatics. I'm sold. I'm using in all my English beers from now on.

Cheers, Whorst

It should be fine without priming sugar. Many breweries just rack into the cask and rely on slow-fermenting dextrins to supply the condition (plus what's already in the beer from primary, as you say).
