Is it usual for All Grain to ferment so well?

As you all know I finished my first All Grain in Saturday.
Didnt make a yeast starter (never do) and didnt aireate that well.
Using S04 yeast the wort has gone from 1044 down to 1012 already (two days).
Thats really good! Really pleased with this, be able to bottle during the week.

Yep, that sounds about right. A good ale yeast can see off a medium gravity wort in no time at all. With a 'DaaB's Flying Starter'â„¢ my last beer finished out fine in just 36hrs...

Interesting you say that as I've had similarly fast fermentations with Nottingham, although IME S-04 does seem to be the more robust of the two.Horden Hillbilly wrote:SO4 does have a reputation for fast fermenting, had you used Nottingham it probably have not been as quick.

Hmmmm . . . Depends on how much you pitch. I've had Nottingham ferment 1.092 - 1.025 in 48 hours . . . I've also had SO4 finish a 1.038 beer in 36, and very similar performance from WindsorHorden Hillbilly wrote:SO4 does have a reputation for fast fermenting, had you used Nottingham it probably have not been as quick.
I'll go with that. I've had S-04 finish in 3 days at 21-22C but it can take 7 days at 18-19C.

Mine fermented fast too, I Mashed mine 27/9 & it was down to 1.010-1.011 by Monday evening 29/9. I have now put into an airlocked wine fermenter to drop bright & will transfer to plastic barrel on Friday for two - three weeks conditioning before drinking.ChrisG wrote:finished at 1012 and bottled it last night.
Three days ferment & then bottling the brew seems like a really fast turnaround. How clear did the brew look?
