Made DL "Old Peculiar " yesterday [sat] been struggling with it a bit the OG only made 1042 i only made 20litres where in the recipe it states 25 litres it should have a 6% ABV.Plus i cant seem to get the fermentation going very well it seems to be going slightly but nothing vigirous gave it a good aerating at 10am today [sun] . Used saf 04 yeast pitched at 17c but the temp has slightly increased now to 19c.Anybody got any thoughts on this what might be the problem.Cheers #-o

I believe that Dave Line's recipes assumed around 90% effiency. I reckon that I usually hit around the high 70's myself, therefore if I were to do one of Dave Line's brews I would up the grain bill. This is probably why you did not reach the estimated og.

Regarding the yeast, it should start fermenting now that the temp has risen to 19c, give it a few more hours & try to keep the temp no lower than 19c if you can.

Skinfull, it could be the low temperature, I've had really slow starts when the wort has been too cold, one took nearly 36 hours :shock:

it's better to have it warm until it starts, then gently drop the temperature slightly

Hi HB, Been thinking about your reply to the topic, The OP recipe is almost a malt extract brew with a small amount of grain so i dont think the grain bill could be increased could it.Cheers
