Yeast not ready, to wait or pitch?

Hi all, work phoned at 8am to say 'no work today', so i set about making Fiddlers elbow from Norms almanac.
I have wyeast 1275 in the fridge, so i warmed it up and boiled a DME 100g/water 1l mix. This was cooled and yeast added to get it going. (Put in airing cupboard).
I then made the wort according to norms recipie, came out at 1042.
However the yeast hasn't got going yet, and i dont expect to be able to use it until tomm. nite( when its fermented out ).
Should I wait & keep the wort until tomm nite, OR I have a packet of windsor in the freezer that I can use straight away?

Me I would throw it in now, might be slow to start but will be there, also depends on how long it has been in the fridge so how many active cells you have.

Been in fridge 2 months, don't I have to think about cell pitch ratio.. thingy? [-o<

I tend to make my starters a couple of days in advance as the yeast takes a while to activate, especially after it has flown half way across the world and been left in a fridge for several weeks (or months)! I'd tend to agree with prolix though; pitch it and it should be ok in time. If you have well aerated your wort (i pass mine through a seive after cooling in my counter flow cooler) this will help with reproduction.

Thanks Eport, the yeast is dropping out of the starter already & i'm gonna pitch in about an hour or so, looks like loads in the bottom of the DJ already.
P.s. I made a breakspear Special 4 weeks ago, tried my 1st pint today, lovely, needs a little longer for the treacle taste to blend completely( only 1 week more), but its good stuff.

No doubt its history now, but you need to get your starter going well before brewday. Personally I would have pitched the dry yeast instead. Two months is too long to expect the yeast to be in good nick, but then it might be ok.
With the lag time in pitching it as is, it might have been better for the yeast to have fermented out the starter wort first IMO.

Well i the wyeast starter last night, and tonight the beer has a lovely clean kraeusen on top, looks like I got away with it. I do usually make a starter beforehand, just a last minuate brew, thanks all. :beer:
