Wierd white stuff in my beer
I made a brew yesterday, all went very well, but today when i`ve got back in from work, the yeast is forming a nice head, but there is white stuff in the beer, it seems like just tiny bits near the top and its dropping to form bigger clumps at the bottom, yesterday was the first time i`ve used Irish Moss in a brew and i`m wondering if its that that is causing the white stuff ?, if not then i`ve no idea what it is, does anyone have any ideas ?

I'd question the yeast you are using? Have you used it before? Personaly i am a great believer in letting the beer ferment then worry if it tastes to quote'jilly Goodson, bogging'.

Surely the white stuff is clumps of yeast?

Sounds like yeast, you should try making a turbo cider with Youngs Cider yeast, it's like a larva lamp!

It probably is just yeast but i`ve never seen it do that before, this will be AG#7, the yeast is safale 04 which i always use, bizzare
I`ve just bottled a turbo cider tonight, i used youngs cider yeast to ferment it, yeah its quite a spectical, had a sneaky taste, it tastes very good but very dry, its my first turbo cider and i`m very impressed.

see my post today in brewdays. A video on there of my FV this evening with S04. I've seen this before with S04 and it does settle into a nice layer eventually. Strange its behaving differently than you have seen before. Don't suppose you have changed temp of FV or area in house you ferment in?

The only thing is using Irish Moss, everything else is the same ?

I've seen quite a few yeasts do this. This is Nottingham in the brew I did on Saturday, after about 6 hours:

They spent about 24 hours do a very convincing hurricane impression, but now have broken down into much smaller matter (and/or settled) as the beer/wort is now just very very cloudy, but fermenting furiously.
I'd say you have nothing to worry about - it'll just be the little yeasties playing silly buggars again.

I've noticed major clumping in starters (Depending on yeast strain) and have put it down to the pH, as pH falls yeast clump together . . . when it falls further they separate . . . . I suspect it also has something to do with protein charges as well

Got home from work today and evrything seems to have settled now, no big white clumps floating about.
Now you mention the PH of the water, i did mash with mineral water that i bought for the bottles to do some turbo cider in, normally i just adjust my tap water, so maybe that has had something to do with it. But i`m no longer worried as it seems to have sorted itself out now, hopefully.

Good to hear.
First time I saw yeast clumping together it was a bit odd - this has only been an issue since moving from opaque plastic bins to clear Better Bottles for fermenting.
Still, it's nice to be able to see what's going on in there.
