was going to use it as my HLT heater and also wort heater. It will heat stainless steel tanks that quite thin

I'd have thought that you needed a spread of heat rather than a direct jet of it but I've not gone the gas route so can't qualify my statement with certainty.

I would be going for a multi nozzle to spread the heat as you could end up burning the hops and the bottom of your pan with that. That flame looks like an oxy/acetylene burning nozzle flame!
