Have take the day off from working and am brewing today 8)

I intend to take some photos, and here's the first one - the mash tun(bucket in a bucket) nice and toasty wrapped up in a duvet (don't tell my girlfriend I'm using it or she'll go ape :shock: :P ):

The grain bill is really simple this time:

4.5 kgs Pale
0.25 kg crystal.

All the other beers I've made have used sugar or flaked maize, so I thought I'd try something a bit simpler. The OG should be about 1042 based on a 70% efficiency.

The yeast will be safale 04.

I was going to stick to the hop bill from my last brew, but add some fuggles as well
i.e.
Goldings 65 g (90 mins)
Fuggles 10 g (90, 60 or 45 mins)
Goldings 20 g (20 mins)
Goldings 15 g (0 mins)

(goldings and fuggles both 5 aaus)

The reason for the relatively modest use of Fuggles is that they have been opened some time, and I'm not 100% certain how I help them early on, so I don't want to risk a brew by making them a central feature.

Any suggestions on the hops side of things very welcome 8)

Ok, mash coming to an end - have made a hop strainer from splatter guide mesh for the boiler:

This is the first time I've used one of these - previously I've used a lauter tun (risk of HSA :shock: ), hop bags (worked well) and stainless steel scrubbers stuffed in the back of the tap (ok, but go slightly clogged). Interesting to see how this on fares.

It's not ideal, but at least it should stop the hops getting in the fermenting bin :wink: ....well we'll see :shock: :)

erm, in the tradition of three letter acronym beers (HSB, HSD etc), I'll call it BDA (Bitter Dave Ale). 8)

Just pitched the yeast, phew! :P

I think my efficiency seems to be getting worse - I ended up with 5 galons (not 25 litres) at 1040 (not 1042). To be honest, I'm not surprised. I couldn't be arsed to find my awol hydorometer to tell me when to stop sparging, so I just guessed. I also batch sparged much quicker today, so perhaps that has a bearing on it. Anyway, I think it should turn out reasonable beer of about 4%, which what I typically drink anyway.

Mash worked like a dream - no adjustments neccessary - strike at 72, get about 66.5; hardly any decrease in temperature over an hour and a half. 8)

Used my new brupaks boiler - that was great. Because of the thermostat it kept water at about 80 C for when needed for the mash and sparge - one less thing to think about.

I also used the imersion chiller for the first time as well, and it was so nice to get it cooled quickly.

I made one boo boo (I always do :oops: ). I filled the mash tun with sparge water, stirred it and went away to let it settle (for batch sparge); EXCEPT I had left the tap open, and sludge went down into the boiler. A fair bit must have gone in, but when I emptied the boiler at the end it was pretty clear. On my first few beers I was really paranoid about getting the run offs clear, but I have got progressively lazier about this and the beers haven't suffered as a consequence :?
