First lager in a long time

Post by Whorst » Fri Dec 26, 2008 4:59 pm

I haven't brewed a lager since the mid 90's. I'm planning on doing a Helles, with pils malt, munich, Vienna, and carapils. I also plan on using Saflager 34/70. I've heard so many bad things about S-23, mainly it being fruity and not a true lager strain. In my previous lager attempts, I used a liquid culture and pitched at around 21c. I would monitor the fermentation, and once in got started I would lower the temp. The resulting beer was great, with no esters. I'm reading things that say you should pitch at your fermentation temp, do to the possibility of ester production. Has anyone on here used 34/70, and have you pitched warm?

Take no heed, I'll pitch at 10c.

Well, I like W34/70 as my house lager yeast . . . but I always pitch at fermentation temperature . . . and pitch lots to make up for it . . . . Which was why I made no comment ;)

Yeah, I'll pitch 2 packs of 34/70.

Why are you putting Munich and Vienna malt in a Helles?

I'm trying to bump up the maltiness. I may replace with a tad of melanoidin.
