I'm looking at brewing a pale beer using Cascade and Challenger. I tried an IPA with these hops and liked the combination so I've knocked this together in Beer Smith. I'd add ABV etc but I closed Beer Smith, saved the recipe and now cant find the fekker ! It worked out just over 5%ABV, cant remember IBU

5gal

4.5kg MO
0.25kg Crystal
0.25kg Torrified Wheat
25g Cascade 7.3%aa 90 min
25g Challenger 7.1%aa 90 min
15g Cascade 15 min
12g Cascade Dry hop

I've not used the program before and havent messed about with recipes up to now so I wanted to keep it fairly simple. Any comments on the above are welcome (including scrap it and start again).
I want the beer to be clean tasting and for the hops to show themselves off. I have Windsor, Nottingham, S04 and US05 yeasts in the fridge. Which would you recommend to suit my purpose ?

TIA

That looks fine to me. It's exactly the sort of thing I've been doing with Beersmith, find two hops that work together and just make a random recipe. :) I'd use SO4 or Nottingham personally.

Of the 4 yeasts you mention, Notts and US-05 should let the hops shine through most. Notts clears more quickly than US05. Perhaps try that.

Ditto. That beer is actually incredibly similar to the beer I brewed on saturday, although yours is a bit stronger. I too like the combination of challenger and cascade. I used Nottingham as I managed to lose my last pack of US-05 during the boil (discovered it in my brewbox when I was cleaning up, must have put it down for some reason and forgotten about it). It's clearing well now and it had hit 1010 on Tuesday. :)

Fermenting: nowt (sadly). Drinking: still a few bottles of my imperial stout knocking about . . . it's rather good now
