OK my Xmas brew is now down to 1013 from a 1062 OG 8)

So it's time to transfer to conditioning keg soon, now I have a beer fridge I'm wondering if it's worth storing the beer in there while it's conditioning/clearing ?

The fridge temp is around 3-6 degC so the yeast would go dormant, presumably this would aid clearing as the yeast would settle down pretty quickly.

So, are there any advantages in storing the conditioning keg at low temps vs room temperature ?

Your yeast and also any haze-causing proteins will settle out quicker. I usually stick the cornie in the fridge if there's room and the beer always turns out brighter.

I'm not too worried about speed of clearing as all my beers drop bright within a few days of transfer from primary (using Jim's gelatine finings method). Just wondered if there are any other advantages ? I guess the commercial guys do it (chill the beer) so they can speed up the clearing and have the beer ready to sell quickly.

As far as I know that's the only reason they do it. I have a hard time getting protein haze out of my beer so that's why I do it.

Cold conditioning only really has flavour benefit if you're using lager yeast which still operates at the very low temperatures.

OK, thanks chaps. One advantage of storing it in the fridge is that it's in the garage and I'm less likely to sneak sly samples before it's ready 8)

Will be transferring my TTL to corny from primary tomorrow after 2 1/2 weeks and still not bright after 2 lots of finings. Guess will just expect a good few cloudy pints to start with and then ok :?

Everything beer related lives in the garage which also has a whopping chest freezer - a couple of hours in there might help ..... :?

theres a place called republics bier halles on gordon street, just off buchanan street, near the station, and a bit further up is The Toby Jug, which normally has some decent ales on tap.

if you can make it out to mount florida, then there is the Clockwork brew pub which is by far the best imo! you can get a train from central station, only takes 15 mins.
