I'm getting a copy of the almanac for Xmas, and I snuck a quick peek at the ingredients in Wherry. It mentions a 'secret' american hop included. I was wondering if the forum have any idea what hop it could be and how its used? I wondered if it were perhaps Centennial - late hopped or steeped at the end?

Was thinking of putting something together in Beersmith. I was going to have a bash at it at the weekend....

malt: pale and crystal
hops: goldings and fuggles
IBU : 30

for the record someone was pretty sure on UKHB it was late hopped with cascade

I've drunk gallons of the stuff, so suppose I'm as well placed to guess as that arcticle. I am thinking of going with this recipe, about the right OG and IBU: -

Even if it doesnt taste exactly like Wherry, it should still make an interesting pint.
Any comments on the schedule from the forum?

I don't know what others think, but that seems like a lot of sugar to me at 12% of the fermentables. Does the alamanac thingy say it contains sugar? Obviously the kit doesn't contain sugar (being an 'all malt' kit); it also finishes quite high (1014 IIRR) which I guess would suggest no/little sugar; of course if the kit has a different recipe thatn this information would be irrelevant.

I just find it odd that the hop with the highest alpha is used as the aroma hop.

Maybe next time I see Ray Ashworth I should just ask him what the hops in Wherry are....

EDIT: yes that sugar level does seem high.

The kit uses a different yeast at least.

on Woodfordes wb site it states the beer has ab hint of grapefruit,the american hop that gives this flavour is Chinook.

Yes I might try upping the malts and reducing or eliminating the sugars. I was thinking the sugars would thin the beer a little. Maybe 450g is too much @ 12%.

I know centennial has a high alpha, but it also has a very powerful flavour/aroma. The centennial brew I am finishing now is fantastic, it was like a pepperpot at first, but its mellowed beautifully over the past month.

and guys experimenting IS the fun of this hobby....

I've never had the stuff but have seen the kit at my local HB shop.
Grapefruit comes from either Cascade or Chinook.
As for Centennial, a fantastic hop. An all Cent. brew is an excellent ale!

Just finished brewing it, finally went without sugars and upped malt to 3.8kg pale and 400g crystal. Ended up bang on 1038 @ 25l

Mods to the new mashtun worked too - doubled the number of slits as I am using 15mm pipe. Ran clear from the off and got a full 25l before it dropped low.

All in all I'm felling pretty pleased.

In fact this was what I went with. 30IBU bitterness and 3.8% estimated strength. Next time I'll replace the centennial with Cascade and see how much difference it makes.

3.80 kg Pale Malt, Maris Otter (5.9 EBC) Grain 90.5 %
0.40 kg Caramel/Crystal Malt - 60L (120.0 EBC) Grain 9.5 %
45.00 gm Fuggles [4.50%] (60 min) Hops 19.3 IBU
30.00 gm Goldings, East Kent [5.00%] (30 min) Hops 11.0 IBU
30.00 gm
Centennial [10.00%] (30 min) (Aroma Hop-Steep)

90min mash @ 67.8

Sorry to be a bit of a Wherry bore.... but I thought I'd show a glass of the original I made, this was with Centennial as a steeping hop. I have to say it is delicious, the colour is about right, it could have done with some dry hopping to give it more nose, but pretty yummy anyhow.
