Get advice on making beer from raw ingredients (malt, hops, water and yeast)

Hi All
Just got home from work, bored tonight nowt to do so decided to put on a brew this evening, the story so far, just got the water on for the mash:

7kg pale malt (maris otter)
700g Flaked Barley
500g Cyrstal malt
907g Golden Syrup
Challenger hops (bitter)
Cascade (aroma)
Irish moss 1tsp

10 Gallon brew
Not decided on how much hops to use yet, im open to suggestions,
Ill keep posting and let you know how things are going or not.
Feel free to offer advice.

mashing for 1 1/2 hours at 66c

What's going on there Reaper ? Are you batch sparging ?

(I ask as avoiding oxidation in the mash is a good thing and water falling from that height into the mash will introduce oxygen).

Hi not sparging just adding the water to the grain, should i pour it gently on the grain

Well I believe breweries mix the grist and liqour together as they enter the mash tun and probably just splash down from a great height so all this oxidation thing is probably overrated :wink:

Personally I add grist to liqour in the tun and gently add the grist and gently stir it in. But that's 'cos I've read on t'interweb that oxidation is a bad thing :lol:

I think that the general idea is to add the grains to the water already in the mash tun :wink:
That way you can mix whilst adding the grain to help avoid dry lumpy bits and uneven temperature.
I sure there are other reasontoo that I am unaware of :oops:
I don't think I should be allowed to drink and type :oops:

Cheers for that lads Ill try it that way next time, Ive just always added the water the the grain and it works ok for me.
An hour left for the grain to mash. Ill be batch sparging with about 3 gallon of water at about 72c

Im hoping to finish at 11:00 ish
I im thinking of using 100g of challenger for 1 1/2 boil and 50g of cascade in the last 10 mins of the boil.

Sparging done now, just bring things up to the boil had a quick check on the OG and with temp adjustments its about 1036, no doubt someone will work out my brewing Efficiency as i aint got a clue how to work it out.
