so, I have done my 2nd AG, a TTL, seems ok, however I realised my new electronic temp probe seems to have failed and not sure what temp I actually pitched my yeast- SO4, anyhow 4 hours into FV and I remember last time I already had a frothy head forming, I have nowt currently. I do have a sachet of Nottingham yeast, should I just give it a stir and add the Nottingham, or just give it a stir and leave it until the morning and then add the Nottingham.

I use S04 a lot, and if it was me, I'd wait until the morning. And if it hasn't started, then I'd take remedial steps.

Don't panic. It will vary and if it's cooler than last time it will take longer. You don't get a mountainous head with SO4. Can you see any brown/white pea sized or bigger items floating just below the surface. If so, they'll grow, watched or not.
Without patience, life becomes difficult and the sooner it's finished, the better.
