The bottled version could be a decent pint but it's crap, it's spoilt by the horrible light struck taste that I can detect in nearly every beer bottled in clear glass, all of Shepherd Neame have this taste also.

Eccentric, just brew what you have come up with in your posted recipe, it looks fine, maybe add some more Cascade at 0 mins, it'll be miles better than crud Marston's churn out.

Recipe: Marstons Old Empire

Recipe Specifications

Batch Size: 25.00 L
Boil Size: 30.11 L
Estimated OG: 1.060 SG
Estimated Color: 10.4 EBC
Estimated IBU: 53.9 IBU
Brewhouse Efficiency: 75.00 %
Boil Time: 90 Minutes

Ingredients:
------------
Amount Item Type % or IBU
6.30 kg Pale Malt, Golden Promise (5.9 EBC) Grain 100.00 %
33.00 gm Goldings [5.00 %] (90 min) Hops 14.6 IBU
66.00 gm Fuggles [3.90 %] (90 min) Hops 22.8 IBU
33.00 gm Cascade [7.60 %] (10 min) Hops 7.5 IBU
33.00 gm Goldings [5.00 %] (10 min) Hops 5.0 IBU
33.00 gm Fuggles [3.90 %] (10 min) Hops 3.9 IBU
54.00 gm Goldings, East Kent [4.60 %] (0 min) Hops -

will burtonise the water with GWs calc, mash at 66c. With all those hops i will loose about 4l of wort to them so will leave the brewlegnth at 25l even though all i wann do is fill a cornie.

EMIT (Estimated Mash In Time) = noon today! So if you wanna comment now is the time to do it!

Steve good on you for giving this a go!

I like the draft beer on of my locals has it as a guest when its available - its superb (The landlord is really good at looking after cask ales)!
I did find it a little dissapointing in the bottles though - I suspect its lightstruck - on the top shelf of my local Tesco's.... ( I ask you!!?)

Unfortunately apart from the cascade zing (I'm guessing from a late addition) I cant really help with the recipe...

But I will follow this thread with interest as I'd be interested in giving this a go myself (although I want to try Pantsmachines M<id atlantic IPA too!)...

I like IPA's and although there are many diffrent variations (eg. GK, Caledonian, Flowers etc.) that are lower in alcohol and less hoppy there is plenty of scope for a clone of this brew! Must be great to be a pioneer!

Looks like a legend in the making! Which yeast are you using? I'd pay money to see a video of your face in 6 months when you try this beer in a side by side with your clone goal.

No sugar? Marston's use loads of it in everything else they brew.

I'm sure your version will be great, if not an absolute doppleganger for the bottled Old Empire...

Probably all the better for more malt and less sugar!

A small proportion of sugar shouldn't hurt the beer. I remember reading somewhere that this will help dillute the protien content and should dry it up a bit. I did this with my last IPA and it tasted amazing. I do like making all malt IPA's as well mind.

Last night in bed I was dreaming of doing an IPA next and wondering where I might find a good high OG recipe that I could throw a tin ( only 1lb :!: :oops: ) of Golden syrup in and thought of....Marstons Old Empire.
BUT I will try your recipe, will have to use Maris Otter and I dont have any Cascade, ( got Goldings, First gold, Challenger and Fuggles) Any suggestions on substituting for the Cascade, gents. :?:

I have to agree I've had it in bottle and on tap at one of my locals and it ain't what I'd call an IPA. Not a bad pint mind but not a real IPA.
