I am planning for a brew this weekend D Lines... 6X Bitter.
My LHBS did not have any Flaked Maize, or Brambling hops
I have Flaked Barley or Wheat Malt and Fuggles
What should I use to get near.

Wheeler's recipe for 6X involves Pale malt, Crystal malt, Black malt, white sugar, fuggles and Goldings. If it is any help I could post that recipe, although I've heard it said that Line get closer to emulating the original brews than W, even if W's recipes are closer to contemporary ingredients used by the brewers. A quick check in the Real Ale almanac shows that 6x involved fuggles for bitterness and goldings for aroma (or it did in 1997)

I'm not sure that Flaked barley or wheat malt will impart the flaked maize flavour to be honest, although I am happy to be corrected on this. Perhaps somebody can tell you where you can get flaked maize, other than a homebrew shop, as this seems quite integral to Line's recipe. You could then combine wheeler's recipe and Line's.

Just a waffley suggestion :wink:

I've seen references to people substituting cornflakes, but I've never tried it personally.

Think I might make a cereal brew. Cornflakes, rice krispies, porridge oats, co co pops and weetabix. Could have a pint for breaky every morning, save on the milk.

I have scanned Wheeler's Home Brewing guide (CAMRA)nothing on 6X listed you must be referring to another publication.
I would be greatful if you can provide me with the recipe.

6X recipe in BYORAAH
23L OG 1.040
3.9kg pale malt
130g crystal malt
mash in 10 litres at 65 C

In the copper
350g white cane sugar
61g Fuggles start of boil

Dry hop with 4g Goldings

By the way try your local animal feed supplier for flaked maize 8)
Or if you don't like that idea use Polenta from the supermarket, but beware of stuck mashes :shock:
Edit Mine comes from the 1995 reprint, which is yours BD?

It's in his Brew Your Own British Real Ale at Home book. For 23 litres (and 25 litres in brackets)

3,700gm Pale Malt (4,050 gm)
80 gm Crystal Malt (90 gm)
42 gm Black Malt (46 gm)
160 gm White Sugar (175 gm)

60 gm Fuggles - Start of boil (65 gm)
15 gm Goldings - last 15 mins (same)
10 gm Irish Moss - last 15 mins (same)

Mash at 66 C for 90 mins, boil 90 mins.

Edit - you got in there first Tubby :lol: , but your recipe is a bit different - what edition do you have (I have the 1998 one).

You could use polenta (corn meal). Or just use corn sugar, although the taste won't be quite the same.

Cornstarch also works. You could try a health food store.
I get my flaked maise (corn) at one of those Oxfam places. A type of all natural speciality store.

Seeing BD recipe is a later edition and improoved experience I am going for that one
Hot water for mash on it's way now 7.57
I only have Crushed black malt should I use the same as listed in the recipe or a smaller amount?

Use the same as the recipe Belto :wink:
That way you'll get the effect that GW was aiming for 8)

You don't get full extract from corn meal by adding it to the mash, as the temperature isn't high enough to burst the starch particles. The best way to deal with it is to use a cereal mash 1/4 Grain 3/4 polenta, mash at 65C for 15 minutes then raise to a boil for 30 minutes, then add to the main mash.

It's not a substitute for flaked maize though, you get much more of a corn flavour.
