Get advice on making beer from raw ingredients (malt, hops, water and yeast)

A few weeks ago I posted about a never ending ferment with my CAP well its in the Bevkeg now it was still going slowly .
Not very bright but ok it should get clearer .
Crisp but does have a certian sweetness which is balanced by the hop which was a total mistake I added all challenger instead Saaz and cascade long story but make sure if you buy in bulk to label well oh and if you keep your yeast on slants label well as perminant marker comes off in the fridge hence the europian pilsner is brewed with Irish stout.

Reminds me somewhat of Alemans story of the 'Cocked up CACA' although I thought that was quite a drinkable beer. He probably labelled it that way to stop us all drinking it
The yeast does sort of suggest why its taking so long to ferment out though
And the 'Classic' American pilsner is also known as a Pre Prohibition Pilsner, and bears very little resemblance to any thing brewed today in the US! Its sort of like the difference between an Export IPA from the 1850's and Deuchars IPA. Pre Pro pilsners were what would have been brewed by the migrant German/european brewers around the turn of the century only modifications would have had to be made to the traditional 'German' recipies and methods to cope with the available ingredients. There was a similar discussion on the UK Homebrew Smartgroups site, when Jeff Renner joined that. Does anyone know if there is an archive for the old UK Homebrew site?

Just to let you know the Classic American Pilsner was bloody wonderful so go ahead use all Challenger and you will be suprised .
The German Pilsner with the Irish yeast is lush
AND ALL GONE
Don't it go quick when it lush
