Mysterio's Sierra Nevada PA Clone

Post by Rparkera » Sun Apr 17, 2011 9:38 am

Drinking my fourth keg of this glorious beer - thanks again Mysterio wherever you are (and Malt Miller for excellent fresh quick delivery). This was made in the same way as the first three - all recently - though was left in the FV for 10 days rather than 7 and dropped pretty clear. I'm finding though that it doesn't form or keep much of a head or lacing aftr 7 days in a corny. Just a bubbly froth after the pour that disappears fairly quickly.

Everything else about it is great - but can anyone give me some tips on where to look to improve by brewing to get a good foamy head again that stays? Thanks guys

Giving it a good few weeks maturation, preferably at lower temperatures usually does wonders for head retention. The froth you mention sounds familiar for freshly carbonated youngish beer.

I will be making this one very soon too after the great reviews. I'll be using US-05 for my first batch then White Labs WLP001 for the the second. Will be interesting to taste the difference. Cant wait to try it, love Cascade!!

Thanks for the suggestions - it's a really hard beer to get to maturity though as it's so popular, even when green! This corny is in the beer fridge at 7C so will see how it gets in in the next few weeks

I used US05 - but it might be interesting to try a different yeast. It's good to work on getting consistent and 'perfect' results with one beer while trying others types for fun. Mysterio's clone is a good one to work with like that

Best batch I ever had was repitching some top cropped us-05 straight into a new batch.

US-05 and wlp001 are fairly similar, best to mash a couple degrees warmer with the dried yeast as it attenuates like crazy.

Recipe is on malt miller, feel free to switch magnum for northern brewer which is more authentic but I can't tell the difference.

Would you recommend bottling or kegging this one?

I made The SNPA from Mysterio's recipe on the 12th Feb, sadly I estimate there is only about one pint left in the corny from the weight of it , I said at first tasting that it was the best beer I have made, and can confirm that it is still is, it really is just nectar......mmmmm! gonna get another one on this week.
:D :D

Did some blind tasting against bottled SNPA with friends - generally the view was that Mysterios was the best by far. Bottled tends to be overcarbonated and - in fairness -doesn't travel well or retain its hoppiness. But the great colour and wonderful blend of crystal malt and cascade hops in this clone are truly exquisite.

Well done Mysterio!

TBH the general recipe formulation is no secret, it is all over the net, I just brewed all the variations about 7 - 8 times and came up with what I thought was the closest.

I did a taste test against the real thing as they sell in in Sainsburys and I have 2 batches I made. There was definitely a difference, however they are all mighty fine in my opinion.

The Hop schedule is on The Malt Millers website here: Linky

Good luck with it. I am tempted to try that one myself :)
