Well... It comes out quite well I think. It's darkish, as you might imagine with an EBC of 28.

I use 4kg of MO to get the OG I want and I got fed up with putting ½ a bag of crystal back in the fridge so I tried bunging in the lot and I like it. This sounds a bit defensive I guess but, actually, I'd really like to know why you ask.

Eskimo bobs Guinness clone - from this forum
My own brau weisse - wit beer with 50% raw wheat detailed on JAM blog below
Biere de garde from CAMRA brew classic euro beers
did a hobgoblin clone once that was v.good from Orfy - may still be on here.

Must admit I tend to do my own thing and use what's available

My best are generally, with one or two exceptions the one I just brewed. I rate this one highly.

90% Pale Malt
5% UK Caramalt
5% German Munich Type II

US Cascade 8 IBU 15mins
US Citra 11 IBU 15mins
US Citra 15 IBU 10mins
US Citra same weight as Cascade addition, 80c steep 30-45mins
US Cascade same weight as above, last 7 days in fermenter
US Citra as above.

I used all pellets and fermented at the cool end with WLP090 in one brew and US05 in another. One was just over 4% and the other low 3s.

I did the 4% one for a 21st party and it went down well with the 'young' lager drinkers, they finished 72 pints well before the early hours. Most wanted
to know where the fruit flavours came from.

Mine is a bitter I discovered by running out of Crystal and only having Amber Malt.

27 Litres

3.5 Kgs Maris Otter
500 Grams Munich Malt
250 Grams Amber Malt
250 Grams Caramalt.

IBU 25 with Challenger.

SO4 Yeast.

Its lovely and Malty just how I like it.

Yes it's nice and Malty I keep the IBU's low so the Malt comes through. Last time I brewed it I used 25 Grams at start and 15 Grams (7.9%) with 15 minutes to go.

That amber reference reminded me of the Choc/Vanilla Stout I made - it is just awesome. Even people who hate Stout enjoy this one and come back for more....

25 litres
4100 Pale
250 Choc Malt
230 Amber
200 Caramalt
400 Flaked Barley
100g cocoa powder

90 min mash @68C

45g Target @90 mins
25g Fuggles @ 10 mins.

S04 and two whole vanilla pods in FV after initial fermentation.
Tea is for mugs...

...and last time I put 5g of EKG in the FV - it was just such lovely beer!

fraserjaxx wrote:I have actually given up trying to emulate beers that I like or trying to perfect my own recipe. This is because I use basic gear and the variables are so great that even if I make all the exact measurements the beer is different anyway.

So every time I want to make a bitter I go for:

4kg Maris Otter
250g Crystal Malt
150g Wheat Malt or Toreffied Wheat
Hops to approx 30 IBU ( usually EKG, Challenger or First Gold)
20-30g of aroma hops( as above)
Nottingham or Safale 04 yeast ( I have tried others)

I have made 50+ AG brews and get a decent beer everytime and its always a little different.
What a refreshing change to hear someone tell it the way it is! I brew with the same casual approach. I change all sorts around and keep notes as a guide, but I just aim to make beer. It's usually better than most I can buy and the odd one I repeat (as close as it gets) if it's been a particularly good one.

As for the top 5.......... couldn't say as my taste keeps moving from dark malty to light and hoppy!

Drinking/Already drunk........ Trucker's Anti-Freeze (Turbo Cider), Truckers Delight, Night Trucker, Rose wine, Truckers Hitch, Truckers Revenge, Trucker's Lay-by, Trucker's Trailer, Flower Truck, Trucker's Gearshift, Trucker's Horn, Truck Crash, Fixby Gold!

Conditioning... Doing what? Get it down your neck! ........

FV 1............
FV 2............
FV 3............
Next Brews..... Trucker's Jack Knife

Great post Johnny8ball, made me laugh, hope you read it when you're sober!

I love the TC I've made and at 8.1% it doesn't take many to get you pissed.

My Mrs had 4 one night, she went to bed and fell asleep with the light on, I woke her up and told her to turn the light off, she said in a high pitched voice 'I don't want to, I don't want to'!!

It was hilarious at the time!!
