4500g maris otter pale malt
500g wheat malt
mashed 2 1/2 hours

boiled
75g Goldings
30g Bramling cross 75mins

Irish moss 15 mins

25g Bramling cross at boil out.

came out at 1060, don't know anything about efficiency

cooled then added 800g damsons left over from damson gin.

Safale-us-05 American ale yeast.

Hoping to achieve 23l of undrinkable muck.

It's based on Carolines ale/100%satisfaction but I ran out of goldings so made up the hops with Bramling Cross as that is what I had to hand and another 25g at boil out for the hell of it.

I thought that as it is whole fruit and would not add too much to the final beer, a light beer might carry the fruit better than a darker beer.

Fermenting away nicely.

I will report back when I have it kegged.

Kegged it on Saturdy (9/6/7) and tasted interesting enough and very promising.
Fermented out to 1010 so by my sums it's approx 7%, one to be careful with.
A subtle damson taste in the background but, being similar to 100% satisfaction a little swamped by the hops. Hopefully it will mellow out into something very good.
