Blackberry porter

Post by eclipse » Thu Jun 21, 2012 5:33 pm

Ok never done a porter before but I am going to do one tomorrow, only problem is my lack of hops just now.

I have HEAPS of cascade, first gold a perle and some target.

I have s-04, s-05 and German Ale (Kolsch) yeast.

Would this work? Which hops and yeast should I go for or am I lacking something vital?

I was thinking about adding the blackberries to the boil, is this the best way to work this?

I made a blackberry stout in March. I used about 6Kg of blackberrys and I added them at the end of the fermentation. I have added them to the end of the boil in the past and the flavour was very light. Adding them towards the end of the fermentation made it very fruity.

I'd go target, first gold and S-04.
The best place for fruit is in the secondary vessle.
The last fruit beer I brewed was a blueberry blonde for my son-in-law. At bottling I had him taste it and added a touch of blueberry extract until it tasted the way he wanted it to.
I'm just here for the beer.

No it didn't clear. It stayed thick and purple.

Hop wise, I'd bitter with Target and leave it at that.
