PoPs stout with a twist

Post by delboy » Sun Aug 12, 2007 4:12 pm

I currently have a variant of PoPs stout in the mash tun :D

Recipe is almost identical to PoPs with one or two exceptions (ie 100 g less roast barley and 100g more choc malt etc.

Pale Malt 4.5 Kg
Vienna Malt 0.5 Kg
Carapils 0.5 Kg
caramunich 0.37Kg
Crystal light 0.33Kg
Flaked Barley 0.5 Kg
Roast Barley 0.4 Kg
Choc malt 0.4 Kg
black Malt 0.25Kg

Also SWMBO asked for some chocolate in the recipe so despite the advice of PoP i have tinkered with it

40 g of Real belgian Dark chocolate and
60 g of twinnings chocolate mocha powder in the mash.
Mashing at 67-68 C for 90 mins.

Im aslo planning on adding 50 g of belgian dark choc and another 100g of the chocolate mocha with around about 15 minutes to go in the boil.

Going to be using stryian goldings as the bittering hop, not sure what ratio of OG to IBU it will be yet but it certainly won't be 1:1, more like 2:1 or 4:3.

Have a good one there Del. I always fancied trying this one however I'm limited by the volume of my lauter tun as it only holds around 5kg of grain

Quick question, will the oils / fats in the chocolate not scupper your chances of a decent head on the brew?

I honestly don't know JP i guess its a case of suck it and see, im hopeful though that the flaked barley and 1.2 Kg of crstal malts will take care of head formation.
Failing that i'll have to get my secret weapon out, Nitro gas .

having a hectic brew day, our wee dog is whelping as i type.

Sounds like you have all in hand there Delboy, the nitro gas is inspired.

Hope the pups and their mum are doing well.

OMG - a bloke who can multi task, well done

Looks nice and chocolatey DB. 8)
Are you aiming for a Youngs Double Choc stout clone?

I think this will have to be the done in the next few brews and let it mature for my winter tipple.
Check out the beers we have for sale @ Mix Brewery

Multifunctioning, i can hardly walk and chew gum :D

Never had a youngs double choc stout so i can't really say that im cloning it.
Since i've dabbled with PoPs recipe already im going to continue to dabble, when the initial ferment dies down im going to boil up the remaining 50 g of choco mocha powder and add it to the FV along with a mere snifter (5-10 ml) of vanilla extract to really bring the chocolate flavour out.

Im probably going to cornie about half of this and bottle half to see how it matures.

Looks good Delboy. If you don't mind I'm going to put this on my autumn 'to brew' list, I promised my brother in law I'd do him a stout for Christmas.

Hope it turns out well,

Matt

Matt i'll keep you posted on its progress and let you know if that amount of chocolate complements it or not.
If it doesn't you could always ditch the chocolate and just go with PoPs orginal recipe which i think got v. good reviews from Garth, frothy and BarryNL.
