When using a wort chiller what temperature do let the hot wort drop to taking into account the fermenter will have to be topped up with cold water. cheers

I adjust mine to give a wort output temp of about 25C, then if I do need to top-up slightly, it'll only drop a few degrees,

If I don't need any top-up liquor, the temperature is still good for pitching the yeast, I'll then usually ferment at 18-19 C

I go for 28 - 30 in the boiler and after draining to the FV and as you say topping up I end up at pitching temp. The biggest problem i've found is the way that with an IC the wort at the top is hot while the wort at the bottom is cool, I don't want to stir though to avoid disturbing the trub, anyone else have that problem and what do you do?

I had to re-read your reply there Wez, but then I realised you must be talking about using a immersion rather than a cfc.... :D

Even if I leave my hot wort for half an hour or more after the boil when maybe some steeping aroma hops are doing their job, I still get loads of break material in my fermenter after passing through the cfc, I know a bit is beneficial to the yeast but sometimes I think a immersion job might do the job a bit better.... :? maybe I should be leaving it to stand even longer before chilling?

Do you recirc into the copper Garth or just cool through the cfc to fv?
I've started recircing and it's working at removing some of the trub, just need to refine the technique and cooling time :?

Garth , just read you reply, when do you use you cfc for the chilling process do you use it in the boiler or the fermenter. cheers

I have no idea what I said :D :D

I use a IC rather than a CFC and find that chilling to 28/30 works for me. I used to get loads of trub in the FV until I switched to Whirlfloc for the last 10 mins of the boil since then it's like frog spawn in the boiler after cooling and it sticks to the hops, getting cleaner krausens too.

I use an IC and that's about the temp I stopped with Monday's brew given that more heat will be lost as it gets transferred and aerated into the FV.

You're quite right that it is difficult to take an accurate reading because, like you, I don't want to stir it and disturb the trub. I just tend to take readings from different parts of the boiler and take an average/guesstimate.
