question about the boil and times

Post by torchwood brewery » Thu Aug 30, 2007 2:37 am

well heres one for the Daab marster?

how do i word this so it makes some sense well here goes .my kettel will hold 50ltr to the rim so if i wanted to do a 46ltr batch i need to do it in two parts to avoid boil over as i would need at least 70 from the mash tun.
i can boil 35 ltrs comfortablly avoiding boil over but how long do i need to boil the second addition if the recipe calls for a 90 min boil would that be 90 mins from the last drop added? or is it an overall time ? i know you guys in the uk with the brau heat bucket systems make wort additions as your boil evaperates off but dose your boil times increas when doing this?
i will do MOCK UP WITH BEER SMITH but i am after the time minimum when the last part of the sweet wort is added .
it probable a silly question but i dont get it ?WALLY I KNOW

well thanks for that mate this is what i have slept on and had a real think about what to do .and after reading your help the solution was sorted.
i think i will stick with the 36 ltr batches as i can handle them ok .

worked out though that a 46ltr batch will require 56.xx ltr boil volume so if i was to fly sparge and add slowly at rolling boil i would be set and no problems would occure so it is very possable and now i am well pleased.

Hi TWB,

I know things differ as to losses and boil off, but I do 46 ltr batches regularly. They are based on 15% loss to evapouration (10%/hour over 90 min) and 7.5ltr loss to trub and equipment.

My boil starts at 62.5 ltr so your original estimate of 70 ltr equipment was spot on as that's what I have

You can cheat.

On our old copper - 45 litre brim - we could start the boil at 43 litres because it was relatively underpowered. Towards the end of boil I'd lob two or three kettles of water in to restore length.

(Drat - better explain kettle - my American cousin had never seen one. It's a electrically-heated jug for boiling about 1.5 litres of water. Don't laugh chaps. My missus took Cousin Betsy round Whittards in Chelsea choosing tea, teacups, teapot, tea strainer and everything only to get back to her house and discover she didn't have a kettle).

The other thing is that you'll have to formulate your recipe to give end of boil gravity at start of boil; then when you top you'll be back where you wanted to be.

Just listening to last week's Ectoplasm on Radio 7:
