I'd like to brew another batch of Gales HSB from BYOBRA, but I don't have any Challenger hops. As I'm hoping to get a bit more of a grapefruit flavour I thought about swapping the Cascade for the Challenger and keeping the Fuggles and Goldings unchanged.
Can anyone say if Cascade/Fuggles/Goldings is a workable combination or not? Many thanks

Re: Can I replace Challenger with Cascade
Looking at my own copy of BYOBRA, the challenger addition is in the boil. Swapping to cascade will make a difference, but quite a small one. IBUs should be in a similar bracket though, so it should work as a substitution.
Ingredients: Water, Barley, Hops, Yeast, Seaweed, Blood, Sweat, The swim bladder of a sturgeon, My enemies tears, Scenes of mild peril, An otter's handbag and Riboflavin.

IMO this will make a big difference - totally different hops surely?

Very different hops yes sladewadey but as they go in at the beginning of the boil i think they're likely only going to give bitterness and not so much flavour, that said I'm hoping to add some towards the end for the extra grapefruitiness. Time will tell I guess

Re: Can I replace Challenger with Cascade
Using Cascade instead of Challenger will make a noticeable difference, but it's entirely up to you as the brewer depending on what you're going for. If you use a classic English grainbill like that with American hops, you've just brewed a tasty American Pale Ale. It's definitely a fun twist for you to experiment with, even just as an A/B comparison, all other things being equal.
Also, for what it's worth, Challenger hops grown in our Pacific Northwest taste extremely similar to Cascade, in my opinion.

Give it a go. One of my favorite mixes is fuggles, goldings and cascade. It makes a great pale ale. Sub.
