I have got some washed WLP860 Munich Helles yeast from May 2015 that I am trying to bring back to life. I have put it in 1.5l of wort and it has been on my stir plate for a couple of days. Krausen has just started to appear so all is looking good.

My question is if I leave the yeast for a couple more days then crash, decant most of the wort off will it be ok for a couple of weeks in the fridge until I am ready to put it into a 3l starter to get enough cells for a brew?

Well if it's going now then it probably will do again in your next starter.

I think the question I would have asked would have been whether to revive the yeast in the first place, to which my personal answer would have been 'no'.

Just regarding yeast washing - unless it was an acid wash directly before pitching (a method used by breweries to reduce the level of bacterial contamination), I don't think it's worth the effort.

Acid washing yeast is quite an involved protocol requiring a lab set up. Home brewers shouldn't wash yeast regardless, water or acid.

Perryin, just leave it in the fridge until you're ready to step up then decant the spent wort. It'll probably turn out fine, but you are taking risks. Blame it on the testosterone and change your strategy next time :wink:

Washing yeast in ClO2 is rather safe. I did this many times.
