Adding steeped grains separately from mash.

Post by Brewmarc » Sun Dec 04, 2016 9:31 am

I have made a Porter AG but have forgotten to add Crystal malt the recipe doesn't call for much. 200g for 5 gallons. The fermentation is into its 3rd day.

Would it be ok to steep some Crystal malt on a mini mash boil it cool it & add it?

Any advantages, disadvantages, differences in the end result, as aposed to mashing at the beginning with the other grains?

If you just steep in hot (65c) water you won't get sugars from it, but you will get a large chunk of the colour and flavour your want as well as some body building dextrins.

If you mash with some base malt you'll get conversion of the sugars too.

Some brewers cold steep (at room temperature) over night and add anywhere between post mash and primary fermentation. I haven't done this with crystal, but I see no reason why it shouldn't be done to add colour and flavour.

Edit: bring it to a boil and simmer for 15 minutes or so then cool before adding it to an FV!

Yes just do it.
When I make a black IPA this is how I deal with not getting a bad PH in the mash adds loads of colour and flavor l.
