I'm sat, drinking my third attempt at a clone of a favoured brew, and whilst I'm not going to say it's cloned, it's without doubt the best brew I have ever done and is finally - bearing in mind this is all-grain brew number 54, something like what I've been hoping to acheive since all-grain brew number 1 in November 2015.

It's slightly too bitter - I'm using my home-grown 1st Gold hops for bittering which are of an unknown aa% (I'd assumed the bottom end of the usual range at 6.5% but they must be higher).

The yeast is a mix of a scavenged S-05 (from 2nd clone attempt) plus the dregs from a bottle of Proper Job (St Austell Brewery) I happened to have to hand - I've scavenged some of this one for future use.

I had to add 300g of table sugar as I hadn't realised I hadn't enough pale malt and needed to hit the 'published' 6.1% - actual % on bottling was 6.17%

I only bottled this last Saturday so shouldn't even be drinking it yet but couldn't resist given the aroma when bottling.

It's the clearest brew I've ever acheived - particularly it's only been in the bottle 5 days!

I know this sounds a bit wet - and I've just totted up this is my 5th pint tonight (been a rough old day today), but I've only managed to get this far because of all the help and advice off the forum so hats off and thanks to all you guys who've taken the trouble to help on specific topics and generally shared your experiences and advice - I'm a happy, hoppy chap.

Thought I'd finish off with a pint of clone V2 - again too bitter, not as clear and not as hoppy (25g less Citra in last 10 minutes and 25g less dry hopping) but still more than a decent pint and probably (apart from a rather interesting coffee/vanilla porter) the 2nd best I've done.

Very good news!

It can take a while for everything to come together 'properly' (and even then there can be disheartening back-slides and challenges with different styles). So very encouraging stuff =D>

Actually no - I 'm sending you V2 which is not far off. Got the son-in-law staying with us this weekend (plus daughter and granddaughter obviously) and he's more impressed with a Cascade IPA done 4 moths ago. All comes down to personal taste I suppose.

Got the wifes family coming tomorrow. Brother-in-laws preferred tipple is John Smiths Smooth. Wife usually ends up buying in a pack of 4 but I've said sod that - lets see how he copes with a few of mine own!

The smell is great, lovely Hoppy smell, good mouthfeel, great taste. Lots of Hoppy burps following.

Well thank God (or you) for that!

I have to say I'm pretty chuffed with it myself. The only drawback is it's my home grown 1st gold hops for bittering - which I've now run out of, and a heavy dose of citra during a second 10 minute boil and then again as a dry hop. Going to post a new thread in the Hop section to see if anyone has a suggestion for a citra substitute that's available as a rhizome here that I can grow myself.

I agree that it all about the challenge on doing a clone, but it costs a lot of money/time to achieve anything like the original and it will never be right.
Just go and buy the original beer.
Work on your own recipes, for a beer that you like.

Nothing wrong with clones. Making a clone is always a good starting point because you know the final result, even if it’s not exactly like the original, will be drinkable.

After making a clone, and for future brews I will use the original recipe but tweak the bitterness or abv or substitute a little special malt or a different hop. When I went through my Punk IPA phase I made 5 different versions. Some better than others but all very tasty.

If I’m going to invest money for ingredients, 5 hours for brew day and weeks of bottling/kegging/conditioning I’m not going to trust myself to invent something totally random that I may or may not like.

For someone prepared to be shot down, that response seems a tad extreme. I hope you decide to stick around and not disappear over something like this.

Back to the subject of clones, I tried a few to get my basic brewing technique sorted but now tend to make my own recipes. Each to their own, though, and we are all brewing what we want and hopefully enjoying it.
