Having reported recently (under 'It's been a long time coming') that I've finally made a beer I'm more than happy with - a Baby Faced Assassin clone, thought I'd give another clone recipe a try - Arrogant Bastard Ale, little realising the name is going to haunt me for some time to come.

Not sure what went wrong other than possibly have my face stuffed in too much of the afore mentioned BFA but what should have been a quite bitter bitter at around 70EBU is actually face-collapsing bitter. Recalculated from my notes to find my hop additions take it to 164 :shock:

I seem to remember reading somewhere that our tolerance of bitterness ends around 110/120 so I'm well North of that.

Going to be interesting to see if this mellows at all but I suspect I could be in for a long wait!

It will fade. I did a piece for Zymurgy last year about recreating British beers from 200 years ago. One that I did was a 188 IBU ipa. It was pretty much undrinkable at first. I bottled it after bulk aging it for nine months and it was pretty good.
I'm just here for the beer.

Would I be right in thinking there's also some kind of limit as to the IBUs which can actually be created from isomerisation in a given wort? If so, are there formulae that account for that?

Sumer is coming it's Shandy time, at 168IBU lots and lots of shandy.
