What do you think of this recipe?

I'm looking at doing it on Monday and aging it in a corni for December?

Looks good. I would flame out the spices and use a high quality Cassia Bark from an indian retailer rather than supermarket cinnamon as the flavour is much better in beer imo.

Thanks Rob I will try and source some for the 2nd batch, but I’ll add them both at flame out.

Could I add the honey into the FV without boiling it? Or add that at flame out?

Fv should be fine, honey is naturally sterile and a thick sugar. Add it slowly as the co2 breakout can be insane!

I made a gingerbread stout in January- spices were soaked in vodka and the vodka added to the the bottling bucket

Not enough ginger or cinnamon but the honey is most certainly there.

Fermentation was quite vigorous, and a bonus cat photo from brew day.
