All the Hops...

Having come to the conclusion that I really shouldn't be using 3 draws in the freezer just for storing hops, I should probably use them.

I do like my hoppy pale ales, and with summer coming up, I'm thinking making myself something hoppy and summery. But I'd like to find a way of using as many hops as I can, without making it undrinkable.

Does anyone have any advice on recipes using lots of hops?

I have a mix of fuggles, goldings, perle, saaz, amarillo, and some of the 7 C's.

Lots of hops but not too bitter? Chuck them in towards the end of the boil. The 7Cs especially.

Have a look at Graham Wheeler's beer engine on here. It will help you work out how much bitterness you'll get in relation to the amount of hops used and the time you boil them for. You'll find it in the link here.

What he said. Just use a tiny amount in your First Wort Addition, and then loads at the very end of the boil for massive juicy flavour and aroma. You could add more to the fermenter as primary fermentation begins dying down, for 3 days or so, then rack-off. Enjoy!

Is there an upper limit on how many hops can be thrown in at the end ?

Not really, so long as you can still strain the wort out to your fermentor. Your yield will be lower than usual because the hops will absorb a lot.
