Saaz lager -using a high AA hop for bittering?

Post by gobuchul » Thu May 07, 2020 9:08 am

I am going to brew a Saaz lager. Based on the Greg Hughes recipe. I brewed it a couple of years ago and it came out pretty good.

The Saaz I have are only 2.2% AA.

Would it greatly effect the beer if I used some Admiral as the bittering hop? It would save me a lot of Saaz.

I would be looking at hitting the original recipe IBU of about 25.

Well I'm brewing it now.

Used 20g of Admiral instead of a load of Saaz to hit about 29IBU.

I will report back in a few weeks.

Just going through all my leftovers and hops from last brew (2017) and have pils malt and 2.2 saaz, thinking of using some mosaic 11.96 AA for bittering and loadsa saaz at the end. I don't have much stock and its very old. What did you do in the end?
I have sent off for some more hops and a lager yeast....only now realising I have no lagering fridge...out of practice!
Still dithering here about what to do so a fake lager, blonde ale is being mused!

Basically pilsner malt with 3% carapils.

Admiral for bittering and 50g of Saaz at 10 mins and 50g Saaz at flame out.

If it works I have enough Saaz for at least 2 more batches and loads of Admiral.

Absolutely. In fact this is what German brewers tend to do. They insist on distinguishing between bittering hops and aroma hops. In fact a German brewer would be quite shocked if you proposed wasting your lovely Saaz hops on bittering, they'd tell you to use something higher alpha and more neutral like Magnum. But if you have Admiral, you have Admiral, will do the job too.

Missed your question first time around. I always sub the bittering hops for a smaller amount of hops with a high AA. I can't tell the difference, saves on the Saaz and less hop matter in the boil. Win win.

I find the recipe calculator on Brewers Friend helpful when I'm switching hops but trying to hit a certain IBU.

https://www.brewersfriend.com/homebrew/ ... calculator

You can choose your hops, weight and AA and along with your other ingredients, batch size etc and it gives you an on idea on everything from bitterness to colour.
