Jonnybeer has done wez's honey ale a couple of times and he and i both like it very much.
My trial run on the new brewery turned out a beer with an OG of 1.037, so i bunged in ~3/4 Kg DME. this shoudl have raised the OG by about 10 points
over the past few days i've chilled it down to 2C and it tastes a little thin.
I really wish i'd done the honey ale instead!
what do you reckon to me taking a couple of jars of honey, diluting them a tad (possibly with the beer?) and raising the temp to 80C for a few minutes, then pitching it in.
will fermentation restart? should i rack to a secondary first? should i re-pitch yeast?
gravity is currently about 1.014 (1.016 @ 2C)

I diluted honey to approximately the starting gravity of my wort. I added mine to secondary after warming a bit.

Wez did a honey ale where he primed with honey (and I think added some to the boil).
I felt like I got a little more honey flavor than what I was looking for and the beer was a little thin.
Still enjoyed it and will probably tinker with the recipe once a year till I get it right.

I think one of the Steve's had another suggestion - too just prime with honey - he gave a suggestion for amounts as well.

So you've joined twice then!
drinking beer at 2C yuk! I had just chilled it as I was planning to rack and cold condition. don't need to now as I've recently come into possession of isinglass and aux finings
My only reason for adding the honey was to get the honey flavour - i'm near drooling just think about 'wez's honey ale' as brewed by Jonnybeer.
the pound of honey has all been fermented and the gravity has returned to 1.014 quite happy about that as the effective OG was then 1.053 and the bitterness should stand up to it fairly well.
