I've just taken a sample glass of my Big Kenny Scottish Ale when fermentation finished I moved it to a beer fridge at 5 deg C for 24 hrs to crash cool I then added 50ml Aux Finings and and left it in the beer fridge at 5c for a further 5 days, the result is a crystal clear polished beer! (A first for me!) I had planned to move to a keg and add isinglass and priming sugars (dme) however I'm tempted now to just keg (king keg) it and artificially carbonate it using the s30 cylinder.
Does that sound like a good idea or would you guys continue with adding IG & primings? I'm worried that I could screw up what is at the moment a star bright beer?
Should I prime?
Not sure about s30 cylinders but isinglass has the ability to clear beer more than once. If you wish add priming sugar then when the beer is carbonated if it isn't clear give it a swirl to resuspend the isinglass.This it what they do with real ales give them a roll round the cellar then leave to clear (relax & have a homebrew).I like the name Big Kenny Scottish Ale
