Moving closer to AG brewing

Post by Vossy1 » Fri Aug 18, 2006 5:47 pm

Ordered me some "stuff"

25Kg Maris Otter malt
3Kg Wheat Malt
3Kg Crystal Malt
3Kg Flaked Rice
1Kg East Kent Golding Hops
10 Gervin Ale yeasts

Picked up the last of my book order today. Got more reciepe's than I can shake a stick at B)

Is there anywhere I can find out about substitution of Hops. A lot of the reciepe's have hops I aint even heard of

That's a lot of stuff to buy in one go if you haven't tried an AG brew before. Especially the Goldings Hops & Flaked rice.

Personally, I would have bought smaller quantities, as not so many recipes will use Flaked Rice & you may also want different hops.

If you haven't heard of all the hops, just try the home brew shops, you'd be surprised the range of hops that are available to the home brewer.

Yeah most of the online HB shops do 15-20 different kinds of hops in 4oz foil packets.

Goldings is a great aroma hop for any British style of ale.

DaaB, Yep as soon as my boiler elements turn up ;)

Going to get my kegerator fridge this weekend, a Matsui MTL55W. You'll find out about it when I post some pics on my kegerator construction. Its an upright and the cornies will be stored 2 on top of 2 with the gas cylinder at the back and taps on the door.

Got 2 more cornies winging their way from Norman as we speak and that will be my set up complete.

RR A lot of the reciepe's I've earmarked use 5-6lb of Maris per 5 gallon so there is ONLY  enough for about 9 brews. At 2 a month its only 4 months supply.

Flaked rice, yes there is quite a lot, but at 2 - 3 oz per brew, 9 brews = 18-27 oz. The hop shops only other size was 500g which is too small.
Edit some of the brews use 1lb of flaked rice.

I have a deep freezer for my own use so the hops will be well looked after. Again 100g for £2.85 or £19.50 for a kilo that's a big saving.

The query with hop substitution was because I'm vaguely familiar with the English and German strains available in the U.K, but some of my books are beers from around the world, with hops I aint heard of like Amarillo, Centenial,Tettnanger, Santium etc.

Blimey! 2 brews a month continuously is going some - I think I would struggle to get through that much beer (2 pints per night - every night)...

Damned right fella's B)

I'll have 4 cornies on the go at any one time and 4 in secondary, to replace as necessary, provided I can convince the wife that she doesn't need one for cider

That's at least 8 brews to start, so though it seems a lot of gear it's not that much, though there is a lot of hops to go through...but in time :P

I'm looking at a minimum wait of 9 weeks per brew, 10 days primary, 7-14 secondary then 6 weeks maturation. Initially there's a lot of brewing hence the large shopping list but once the 4 in the kegerator are full, I'm sure "production" will slow down...or maybe not :stun

I'm a "funny" drinker some weeks/months I won't drink at all, others it's a minimum of 2 pints, max 4 a night...depends how I feel.

Sometimes I go off the beer altogether and switch to wine. The wine switch lasted 3 years once :o

So Vossy, do you have 4 fementing vessels on the go at the same time then or do you do them in a sequence of say two at a time?

Does anyone worry about their beer getting light struck while in the FV? I have often wondered about this if leaving a beer in the FV for a few extra weeks; they are mostly translucent and therefore light can easily get to the whole beer volume.

Edited above post while you added reply EB.

I keep my vessels in an understair cupboard, so no light at all, so luckily thats not an issue for me.

I've got 2 brews in the corny's at the mo but they're never going to get to mature  , both being 2/3 full at the mo.

My next brew will be 4 x AG for the corny's. These will be done at the same time roughly. I've got a kit in primary now which should see me through the baron period :o :P

So in answer to your question yes, 4 on the go at the same time. Sequencing....I might have to do this because if I prefer 1 of my beers in the corny's, it will disappear fastest and will need replacing before the others.

I think Vossy, you need to check out http://www.forumforfree.com/forums/inde ... c=932&st=0 thread from a few months ago.

Definately a good idea to keep plenty of batches on the go. I do easily 20 gallons month and just let beers sit for weeks in the secondary to mature. It's always way to tempting to drink a batch weeks before its peak if it's all you've got. Your liver won't thank you but your tastebuds will! :beer
