Hi everyone, this is my first post on here so please bear with me. Ive made many kit beers before and having read the all grain section on this site, i think i understand the procedure for an all grain beer. the bit i dont get is how much water i need to put into my mash tun with the grain? also after the grain is finished mashing, is this liquid in the mash tun drained off and kept as part of the final wort, along with the with the total from the sparging. also should i have the total quantity of wort needed after sparging, ie, if i want to finish with 36 pints, and i only drain 18 pints from the mash, i need to sparge with 18 pints. Hi. The usual ratio is between 2 and 3 liters per kg of grain. So for a 5kg grain bill, you would need between 10 and 15 lt of water.

Re collecting the sweet wort, you need to run off all of the liquid and sparge until you collect the required amount. The grain will always retain some water - you can't avoid that. Most people stop sparging when the specific gravity of the run-off falls below 6 (some people stop at 10), to avoid problems with leaching tannins from the grains. If this happens before you collect enough wort, you'll need to top up with plain water.

Thanks guys, thats cleared things up bit. cant wait to do my first all grain, just waiting for the last few bits to come through the post.

By the way, this is a great site your running here, so much usefull content, and i can see this forum being my most visited site :) i happend to find your site when i was looking for a way to connect a beer engine to a presure barrel, and found exactly the answers i was looking for.
