Yes, that would be great!Thanks for that - the lager malt is on order. I have a lot of Mount Hood, due you think this would be a suitable replacement for the Hallertau?

Hmm, OK. A few questions if I may:
At what temperature will the beer be served at, for both the judging and in the prospective pubs? Will we have any control over the final level of carbonation if it is to be sold in pubs – i.e. will it be from the cask through a beer engine or will it be controlled, like a corny keg sort of setup? Carbonation and temperature can both change the overall character of the beer hugely!
Oh, and will be judged on clarity? Considering on a pro system we’d have the option of fining and / or filtering the beer. This ties back in with temperature again.

2, the beer will be judged by brewers (as well as writers etc) , for brew-ability, quality of beer, feasibility, and all-round beer performance. I am working on the judges forms as I type. It's tough, but try to brew beer that you love, you'd love to share with others and demonstrate your talents!
3, clarity, perhaps. The beer is fined in cask with Isinglass/aux finings, we also crash cool beers to drop as much yeast from the beer as possible, but we don't filter.

We, at the moment, can't get below 11'c in ferment. The cooling did crap out on us yesterday, so we might have a nice Icebank chiller in place in a couple of weeks, which hopefully means Kolsch! but, for the moment, it's ale temps only. Sorry. Got a couple of things to enter. One's a bit different, one didn't turn out quite as well as I hoped. Be good to get the judges feedback if nothing else.
