Belfast pride 18-11-07

After beating the Danes at windsor last night to keep our slim qualification ambitions alive im going to do a Belfast (London) Pride clone :D

Thanks to those who helped me with the recipe formulation clicky

Marris otter 3.105 Kg
crystal 0.305 Kg (120 EBC)
Maize 0.200 Kg
Carafa I 0.050 Kg (900 EBC)

Mash at 66-67C

Invert sugar 640g in the boil.

90 mins
Target 11 % 14g
Challenger 5.6 % 14g

15 mins
goldings 4.1 % 20g

Ferment with fullers yeast/whitelabs 002

Im away to heat up the water.

The brew is presently chilling as am i 8)

Not sure how much i'll get into the fermenter yet but the last gravity reading was 12.2 brix which i make about 1049.

The fullers yeast starter has been decanted and just needs mixed with some fresh wort before pitching (i think its been working hard to tell really).

The magnetic flea that is in the flask is going into the fermenter as well so i can set the whole thing on my stir plate and just switch it on for a few mins when i want to rouse this lazy yeast, save me sanitsing a paddle all the time :D

I took the advice of caramelising some of the wort as well, reduced about 2 litres down to a few 100 mls so hopefully that will aid in the elusive toffee taste :D

Yeah beatnik i was in the kop jumping about like all the rest of the lunatics :D, most of my mates are headed over to the spain match for a few days in the sun, sickened i couldn't be there, just couldn't afford it with my wedding coming up next year.
If we do somehow manage to qualify though i've got permission to go to the finals, since that would probably be a once in a lifetime opportunity.

Back to the beer, well setting the fermenter on the stir plate seems to have worked a treat, even though i only flicked it on for 20 mins here and there i now have a lovely rocky head forming. Pretty much on a par or quicker than with any of the yeasts i've used :D

I suppose now that its kicked off i can dispense with the stir plate treatment or will i have to give it a 2 min wizz now and again, any fellow WL002 users out there got any advice??

I'm in exactly the same position:

Wedding in September, mates away to Spain, me with no money and I've got the follow your team ticket if we qualify! :lol:

Had a taster of the london pride today, it looks to have finished fermenting. Its down from 1048 to 1013 so that makes it about 4.7 % and spot on with the bottle version.
It has an emormous malty, toffee nose which is just what i was looking for. Nice amount of residual sweetness also. It leaves a lingering taste of hops on the toungue which is maybe down to the target :-k (its certainlly not an unpleasant taste though).

Looking at my recipe again it would seem that i added an equivalent weight of target and challenger, where as with grahams recipe he gets an equal amount of bittering from the challenger and target.

When i do this again im going to change the hopping from
90 mins
target 11 % 14 g = 17.2 IBU
Challenger 5.6 % 14g = 8.8 IBU

to
90 mins
Target 11 % 10g = 12.3 IBU
Challenger 5.6 % 22g = 13.8 IBU
