right, i'm on the brew again.... boom boom tssssh. :oops:

got 10 mins boiling time left, and my yeast starter is going strong, but it smells a bit cider-y, starts off malty and yeasty, but after a good lung full it definetelly smells of sweet cider, do you think its safe to use? its the another bottle of the whitelabs english ale yeast that i used last week, which turned out fine, but didnt have this smell from what i remember.

anyway, the recipe was based on Daabs brew, but i didnt have any cascades.

4500 g MO
250 g torrified wheat
300 g crystal

20 g amarillo 8% 90 mins
5 g amarillo 8% 30 mins
5 g amarillo 8% 20 mins
10 g amarillo 8% 10 mins
20 g amarillo 8% 0 mins

36.3 ibu
target OG of 1.048 based on last weeks pathetic 60% efficiency.

any thoughts on the yeast guys?

I'd go with something simple like nottingham or even better us-o5 if you have it, both will let the hop flavour come through to the fore.

Edit: Completely missed the bit about the yeast starter :oops: i thought you were asking whcih yeast to use for the brew, i blame my hangover.

tastes pretty disgusting to be honest, so i've got a stand by pack of gervin but i'm about to transfer last weeks ale, so i might just pitch on the yeast cake.

i'll probably split this one and dry hop half of it. haven't done that for years and quite fancy some pungent amarillo aroma! in fact, i haven't done it for the past 38 brews if my notes are anything to go by!

aye, i've just recently transfered them all into beertools pro from my note note. its quite handy!

within 2 hours of pitching it was bubbling away, now its taken off like a rocket! think i'll leave this one in the bath tonight cos the krausen is only an inch from the top of my king keg already!

well i came home to a slight mess today. i was scared the temperature drop in the bath room over night might kill off the yeast as the min temp in there got down to 14c, but my fears were unjustified! :lol: thankfully i rigged up a blow off tube into a bucket of water last night, so i have a bucket of thick creamy watery yeasty stuff now thats going down the pan.

:lol: tasting notes? if its nice it get a tick, its its woeful it just get put to the bottom of the pile with me. although with my beertools pro thingy i have to amend the file names to utilise the same system, with a simple "good" or "bad".

thats a cool idea daab, never thought of that!
