Brew day #2 - Black Shawp Bitter

Post by Toast » Sat Jul 26, 2008 4:57 pm

I must be hooked.
Brewed last week and now brewing again today:

Batch size 23L

Boil time 60 minutes

2.95 kg Pale Malt
.34 kg wheat flaked
.23 kg crystal dark 77 lovibond
.03 kg Roasted barley

28.35 g of Goldings at 60 mins AAU 5.8%
21.26 g of Fuggles at 45 minus AAU 3.6%
14.17g Fuggles at 15 minutes AAU 3.6%
21.26 g Fuggles at 5 minutes

This is a variation of a recipe reported by iowalad - thanks iowalad!

I think my MT is more efficient than I imagine as both brews I've put through have ended up being watered down.

Got the mash temp all wrong: I thought the hot weather would not mean such a drop from tank to mash. checked temp after mash in and argh 68..69! [must have been a hot pocket] added cold water: 64.1 Oh b*gger! added hot water 64.2 added more 64.4 thought: f- it..and left it. in terms of efficiency I'm not au fait enough to calc yet, but I must be doing something right if my preboil/postboil OG is higher than expected.
It's in the shed doing bugger all..Probably too hot. My 1028 yeast starter never did anything - still sitting there like a jar or flat wort - so I pitched in S04. Here's hoping it F- works after a day of slaving over it!

Last week's extra strong IPA (oops) is in the barrel and looking lovely. Should keep till Christmas the amount to alcohol in it

It's called Black Shawp after my Friend Mr Blackshaw, who lives a few miles from Masham and made the request...

S02 finally growing in fermenter now the temperature has gone down.

No life from 1028 starter in jar. Is this normal? Have I done anything wrong? I rinsed the jar in which the culture was to grow in Star San, and shook out the excess. Have to admit it was odd not rinsing out the steriliser.

How much wort are you drawing off from the MT? Don't forget to keep sparging until you reach about 1005 .. i can usually gather just short of 30l before the boil so after evaporation i usually end up with around 22-23L .. much easier to work out efficiency without having to dilute ..

Oddly enough, any star san residue can be metabolized by the yeast.
That's exactly what I'd read and thought, but the starter's been made for 40 hours and shows no signs of activity. I'm keeping it simply to see what happpens as I've used a dried yeast in the Black Shawp.

OK...I'm simply sparging till I've got the volume required in the boiler. Do you mean sparge till the wort coming off is 1005 or sparge until what's in the boiler is 1005? I assume the former. Given the boiler boiled over with 27.5L, I'm loathed to fill it any further!
